Department: Service Meat Distributors (SMD)

Position Summary

The Meat Distribution Manager for Service Meat Distributors (SMD) is responsible for overseeing the daily operations of meat procurement, processing coordination, pricing execution, and distribution to Talpa Supermercados stores.

This role is critical to ensuring product availability, cost control, and operational efficiency within SMD’s processing and distribution environment. The Manager will support margin optimization by closely managing yields, cost per pound, and shrink, while ensuring alignment between production output and store demand.

Key Responsibilities

Demand Planning, Forecasting & Production Coordination

·       Support demand forecasting based on store orders, sales trends, and promotional activity

·       Coordinate with processing teams to align production volumes with forecasted demand

·       Monitor daily production output and adjust distribution plans accordingly

·       Participate in weekly planning meetings with Operations and Store Leadership

Cost Control, Yield Management & Pricing Support

·       Monitor cost per pound, yields, and trim loss across processing operations

·       Identify opportunities to improve yield and reduce waste during cutting and processing

·       Support execution of pricing strategies based on cost fluctuations and commodity trends

·       Assist in evaluating margin performance across meat categories

Procurement & Vendor Coordination

·       Execute purchasing orders for raw meat products in alignment with approved vendors

·       Maintain strong relationships with suppliers to ensure quality and timely delivery

·       Track pricing trends and communicate market changes to leadership

·       Support vendor performance tracking (quality, consistency, pricing)

Processing & Distribution Operations

·       Oversee daily operations within SMD, including receiving, processing, packaging, and distribution

·       Ensure timely and accurate product delivery to all store locations

·       Maintain proper inventory levels of raw and processed products

·       Enforce compliance with USDA, OSHA, and food safety regulations

·       Ensure proper cold chain management and handling procedures

Inventory Management & Shrink Control

·       Monitor inventory levels across raw materials and finished goods

·       Implement controls to reduce spoilage, shrink, and product loss

·       Track product rotation (FIFO) and shelf-life compliance

·       Conduct regular inventory audits and reconcile discrepancies

Financial & Operational Reporting

·       Track and report key performance indicators, including:

o   Cost per pound

o   Yield percentages

o   Shrink/waste

·       Inventory turnover

·       Provide operational insights and recommendations to leadership

·       Support cost-saving initiatives and process improvements

Leadership & Cross-Functional Collaboration

·       Supervise and support team members within SMD operations

·       Partner closely with:

o   Store Operations (demand alignment)

o   Finance (cost and margin tracking)

o   Procurement (vendor coordination)

·       Support new store openings and increased production capacity needs

Qualifications

Required

·       5–8+ years of experience in meat processing, distribution, or retail grocery operations

·       Strong understanding of meat cutting, yields, and production processes

·       Experience in inventory management and cost control

·       Knowledge of USDA, OSHA, and food safety regulations

·       Strong analytical skills (Excel, ERP systems preferred)

·       Bilingual (English/Spanish)

Preferred

·       Experience in high-volume meat processing or commissary environments

·       Experience supporting multi-unit retail operations

·       Experience in Hispanic/ethnic retail markets
